To hide your Jailbreak, you would install something like Xcon. But I don't think you're receiving that issue because of your Jailbreak. Boot into Safe Mode and try installing the profile from there.

Are you the t0r? - Also, MAC/Wi-Fi Address are not the same as UDID/UUID. And it can be dangerous if you change those.
