Nice but there's a much easier way. And you can skip the UUID stuff, just use a * and it'll work pretty well.

ARM64 in 64-bit version of IDA. Keep it at MetaPC. It will automatically decide the best architecture.

Can you try editing the info.plist and adding your device model to the list of supported?
