I don't think there's a way to avoid it. Only iPhone 4 can upgrade and downgrade from what I've heard.

Jailbreaking is like logging in to an Administrator account on the iPhone. The account you're currently using is like a simple user account where you can only do limited things. There's just one Binary and it's usually in the same name as the app folder and has no extension.
