No need to convert to hex. Switching to hex view a shows the hex codes. All you need to do is modify the hex and save the hex before you modified it & the hex you modified.

You use iGG & gdb to find the offset in IDA to hack. You can use this old video for an example: Code Injection most of the times need to be updated since the offsets change but sometimes it's not necessary.
