Some apps on iOS 9 do not work with a thinned binary. Especially if your device is x64.

Doesn't matter either way. Even if you restore it, you'd be holding a brick since it'll require previous owner Apple ID.

You can load the binary in IDA and disable the checks from there. It won't be easy if it's the first time. https://www.trustwave.com/Resources/SpiderLabs-Blog/Jailbreak-Detection-Methods/ That's still quite useful.
