You shouldn't be watching ARM64 (x64) offsets in GDB.

That's an ARM64 offset and you're not supposed to remove the 1 from the beginning.

You sure that's the right offset? What if you watch another random offset?

What are you saying? The old patcher had a speed of 9.0 which was slower and non-configurable by the user. Anything above 9.2 will get you disconnected.

Reinstall the Cydia .deb? If it still crashes in Safe Mode, that means some files might be damaged or unavailable. So re-installing Cydia and its dependencies might help in this case. If not, Cydia Impactor your device and Jailbreak again.

The offsets always change when you close & re-open the app.

You can try locking the edited values which make them not able to decrease or increase while you're still using the game. Some games are able to store the modified values into a save file so you will get the edited values next time you start the app. But, some other games you cannot make them permanently stick by just using Gameplayer. You will need to make your hack into a .deb or editing the binary.
