It's up to you, but there will most likely be an iOS 11 jailbreak next unless exploit(s) got patched in iOS 11 but it didn't seem like that much of a change.

Just stick with iOS 10.3.3 because it's lower, also you can save your blobs for newer versions just in case one comes out for a later version.
