You can find other apps I used here.

If you go to the Installed tab in Cydia it should remove them, you can also remove them from where you installed them too usually in /var/mobile/documents/ -

Well you won't have Cydia and Mobile Substrate so you can't do too much so it might be good to wait because you'll have to install everything that does work manually.

You can load it into IDA which can read the binary which you can modify for hacking. But you can just crack the app to give it to other people also like paid apps/games without them needing your Apple ID.
