You can't. Unless you have blobs to update/downgrade then jailbreak. (If I'm wrong)

So what should I do? Removed my jailbreak first then update to latest version? and then jailbreak it?

I believe that it would upgrade your iOS to 10.3.1 or 2 not sure which is not jailbreakable

ios 10 still don't have jailbreak?

10.2 and down have jailbreaks for them but 10.3 and up they don't have jailbreaks so if you want to jailbreak the best thing to do is to save blobs and stay where are you

i believe an ipad 2 (assuming an iPad2 is your device) cannot be updated to ios 10.

latest it will be updated to is ios 9

ios 9.3.3 is jailbreak-able

Latest for iPad 2 is 9.3.5

You think Apple forget that?

Can I update my os to 10.2 or older to jailbreak my device?

No you can't. Latest is 9.3.5 for 32-bit / 10.3.2 for 64-bit devices
