Yeah as I remember you need to set your date to Aug 1 2014 for the app to work properly on iOS 8. And I think you will have a certificate installed after installing the app. Check in Setting >> General >> Profile.

Use the Print/Save as PDF method with Background graphics enable. That's a bit better than not getting it at all.

Update will be fine. All things will be intact. Other way is to check if his PC detects the device as Camera or storage. If that's the case, he can copy all photos/videos. No idea what's causing your problem. Try using LocaliAPStore to purchase a subscription then use VPN. Remove everything then start fresh.

Try to use a VPN and point it to UK IP address. Or create the patch again. Remove the UFC patch in flex and the patches/dat file in var/mobile/Documents/Flex. Install a fresh UFC.TV app then create the patch again.
