Kara No Kyoukai is the absolute bomb. Awesome music, great plotline and philosophy, really sets you thinking. Slightly violent, so keep out if you cringe at the slightest hint of violence.

Fate Zero. About summoning and duels between summoned subjects, called 'servants'. Endearing storyline and is tear-jerking without being excessively whorish about it. Very deep for an action-oriented anime.

 

And who can forget Evangelion?
