My JailBroken 5c running on ios 8.1 is asking me to update it but when i click remind me later it just crashes it

You can always click on details which takes you to settings where you can go to settings>usage then delete the update manually.

ive tried it and clicking on 'more info' they both freeze it making me having to force restart it

Try downloading the terminal tweak to see what is causing this to happen.

i can't access the phone to be able to and my computer doesn't recognise the device

Try this:

1. Turn off the device.

2. Click the Power Button to turn on your iPhone and press and hold the "Volume +" button at the same time until the device starts.

3. Open Cydia and install the Tweak "Software Update Killer".

4. Reboot the device
