So I'm trying to replace a document folder but idk how to replace the old folder with the one i downloaded and i tried using Dida's tut but he only replaces a .plist file Any help? thanks

Can't you do the same thing? Drag the contents of the downloaded folder to the old one? If it doesn't work, I'm not experienced with iBackupBot nor did I try using it.
