How can i delete my progress from an email or how to start from 0 on the same email?

In the game settings, after connecting your game save to Game Center or Kefir, you have the option to tap “Disconnect” for each service.

Then reinstall the game or backup & wipe data with Apps Manager (if jailbroken).
