Because the epidemic has given me more time, I want to learn ios hacking skills, and I can publish it here in the future. Are there any complete YouTube videos for teaching reference?

I don't think anyone has made one from 1 to 100 but they're scattered around.
I suggest to do unity game hacking cos you can use the dumper to get function names
1) Just learn how to crack a game; i.e. make IPA
2) Hack the game using IDA (tons of tutorials for this in Tutorials/Youtube, just search IDA iOS hacking and look for the one which makes use of unity dumper)
These tutorials may give you some insight, but they're not unity hacking but helpful regardless
