I don’t know if it’s the right place but….can we finalize the ATV while the mod menu is temporarily removed (if we got all the parts)? Or will it lead to a glitch/bug?

try to disable the no hunger & no thirst mod and then wait to die. it may works if not, i don’t see any other way.
