that's a though decision. I personally was in same boat, i upgraded to 10.3.1 and saved shsh blobs while apple is still signing that version.

I think I'll update to 10.3.1, but how do I upgrade to 10.3.1 and not 10.3.2 as it only gives me one option

first make sure you have a backup on whatever version you're currently on. Then download 10.3.1 here http://www.redmondpie.com/download-ios-10.3.1-10.3-final-ipsw-links-for-iphone-and-ipad/ 

also make sure to save shsh blobs.
