I am not sure I understand the reasoning for signing and unsigning OS versions for the Apple systems. That and why jailbreaking takes as long as it does, we are not a few versions down the line and im kinda stuck. All respect to those who do, I am not acting like a wizard who knows what the heck is going on, so when I say I dont understand, its not because I do know how its done. I was just looking for maybe an explanation.  And if there are ways around the unsigned versions.

Apple stops signing old firmware so that it is not supported outdated software. It makes it easier on developers and allows Apple to ensure that when you update you're getting the latest software. Mainly to combat jailbreaks.
