Yep, a silly question and it look dump because it's so easy but i couldn't find any ways in this forum. So i want to ask how to change value in a game ( ex: coin, ammo, ...) that not server side Thanks fir helping

If you've looked in Flex and couldn't find anything, IDA is your only option, I believe.

Look in the Tutorials section on how to hack using IDA.

How do i check i search how to get unlimited coins and it seem like each game have their own ways

Install gamegem , Gameplayer or iGameguardian from cydia , run game like temple run , and look at the value of coins and put that value in any gamegem or whatever cheat engine you install , Go back to game and buy some coins and remember that value and go to cheat engine and type that value and modify it to 99999999 or whatever value you like

Well then, those games have a stronger Backdoor protection which will not let you change the values with just a Memory Editing Program like IGG, GameGem etc. For that, you might need to make a request for a Cracker/Cheater to help you out.
