My iPad doesn't even let me update to iOS 9 , it stays on "Checking for Update..." Couldn't I connect to iTunes and I can choose to update it through iTunes too right?

You need iOS 9. A tweak called UniversalForce enables force touch on all devices. It's in "repo.ioscreatix.com" I recommend install RevealMenu when you install UniversalForce

Yes, but it would directly upgrade your device to 9.1. Install the 9.0.2 firmware from ipsw.me then downgrade with it.
