I have a question since I'm new to this, how do I update the game? Like do I need to get the new ipa and resign/reinstall it again? Won't I lose my progress cause of that?

What is the process using esign? Since that's the one I'm using currently. Do I need to delete the app and reinstall?

1. You need to have the cheat source code in order to update the IPA to latest yourself. In your case if you want to have updated games version, ask the modder / cheater who uploaded that IPA to update

2. If you use Sideloadly to install you won't lose any progress, just simply reinstall the ipa with latest version and it will overwrite, as long as the old ipa you also used Sideloadly (with same apple account)
