You can restore with your iPhone without iTunes Setting-> General -> reset -> ecrase all content and setting. Make a backup before. Reinstall your iphone with your backup on iTunes and remake the jailbreak to reinstall cydia.

The problem is cydia, itunes blocks restoration because of cydia. Personally, the only solution is that you retaures your phone directly without iTunes.
