You don't really need to reset crowns back to 0 if you still want to use crowns to instant upgrade stuff. To add crowns again, just close your game from multi task and go back into setting, set how many crowns you want and than apply changes again. 

If you just want your crowns to reset back to zero, you'll see the little camera where the "Old Man" face is at, click the face and it'll probably be in the bottom right hand corner in the little menu. If you don't see anything, you may need to upgrade your Town Center.
