Nope. I know how to click shift at the same time because that's what I did. I have done it twice today just in case I missed something, I clicked shift and update at the same time selected the file, it installs and wipes all of my apps and data, it won't restore from the back up as it won't show even though I know the older back up is there, it only shows me the latest 2 back ups to select from.

Yesterday I discovered I could downgrade to 8.2, so I found the right file spent ages downloading it, followed all the instructions to install it and yes it works, but be warned ... I backed up my phone before I installed 8.2 because I read it does a factory reset and completely wipes it. When mine was completed, I clicked to restore my apps, contacts, notes, calendars etc and it wouldn't restore because my back up was 8.3 and my iOS was now 8.2, so be warned! I'm now back on 8.3 because I would have lost everything otherwise
